These muffins are a staple around my house! ANYTHING banana is a YES for me. Banana bread is one of my absolute favorites, so I am always exploring new ways to enjoy banana bread as a healthy version. 

These muffins are MOIST beyond belief, they freeze well, have the perfect amount of sweetness and also serve as a great snack for on-the-go when you have a toddler who eats more than you 😉 

Ingredients: 

  • 3 overripe bananas 
  • 1 cup whole wheat white flour 
  • 2 eggs 
  • 1/4 cup coconut sugar 
  • 1 tsp baking soda 
  • 1/2 tsp baking powder
  • desired amount of chocolate chips 

Directions: 

1. Set oven to 350 degrees 

2. Mash bananas in a large bowl, combine eggs with bananas and mix well. 

3. Add in the coconut sugar, baking soda, baking powder and flour. 

4. Fold in 1/2 the chocolate chips. 

5. Pour batter into a muffin mold and top with additional chocolate chips. 

6. Bake for 12-15 minutes & ENJOY!
