Sweet Potato Muffins

The perfect sweet treat for not just yourself, but your kiddos too! My toddlers devoured these and best part about it is–no added sugar! 

Sweetened naturally from bananas & can also be stored in the freezer for a later date! 

Comes together in minutes & in one bowl! 

Ingredients: 

  • 1 cup flour 
  • 3 overripe bananas 
  • 2 medium sized (cooked sweet potatoes) 
  • 1 egg 
  • 2 tsp baking powder 
  • 1 TBSP ground flax 
  • 1 tsp cinnamon 
  • 1/2 tsp nutmeg 
  • 1/4 cup coconut oil 
  • 1/2 tsp vanilla extract
  • 1/2 cup almond milk (or milk of preference) 
  • Desired amount of chocolate chips 

Directions: 

1. In a food processor or blender, add bananas & sweet potatoes & blend until smooth. 

2. Add in remaining ingredients aside from chocolate chips and blend on high speed until combined. 

3. Fold in chocolate chips 

4. Spoon 2 TBSP worth into muffin mold & top with more chocolate chips 

5. Bake on 350 degrees for 15 minutes & ENJOY!
