The ULTIMATE Christmas morning breakfast right here!

Breakfast on Christmas morning is always a tradition in my home. We generally stick to the same thing but this year I was determined to find us something new & DELICIOUS! Well here it is!  These pancakes taste just like a hot chocolate AND they have a gooey center stuffed with chocolate chips and marshmallows–it doesn’t get better than that! 


Ingredients: 

  • 1 & 1/2 cups all purpose flour 
  • 1 tsp vanilla extract 
  • 1/4 cup coconut sugar 
  • 1/4 cup cocoa powder 
  • 1 TBSP baking powder 
  • 1 tsp baking soda 
  • 1 egg 
  • 1 & 1/4 milk (add a little extra if batter is too thick) 
  • 1 cup marshmallows 
  • 1/4 cup mini chocolate chips 
  • 3 TBSP powdered sugar + 1 TBSP milk (for frosting) 

Directions: 

1. Mix together flour, sugar, cocoa powder, baking soda & baking powder. Mix well until all clumps are gone. 

2. Add in your vanilla extract, egg and milk. Mix well until a batter is formed. 

3. Fold in 1/2 the marshmallows and 1/2 the chocolate chips. 

4. Grease a pan over medium heat and pour 2 TBSP of batter into pan for each pancake. 

5. Add in a few extra chocolate chips and marshmallows to the pancake once it is cooking on the pan to get your “gooey” center. 

6. Flip once you see bubbles forming around the pancake. Repeat for remaining amount of batter. 

7. Create your frosting & pour over pancakes once they are finished cooking. 

8. Top with additional chocolate chips, whipped cream, chocolate chips, etc. & ENJOY!
