Peppermint Oreo Cookies

I will start this blog post out by saying that when baking these I intended to give them to neighbors & friends. I tested one (as I always do with my recipes) and realized one bite in, these were WAY TOO GOOD to give away!
The peppermint mixed with the Oreo makes for the best combo of flavors & while this cookie is FAR from healthy, what is healthy is ENJOYING LIFE! That means eating sweet treats here and there when special occasions roll around. You know I am ALL about balance 🙂
Ingredients:
- 1 cup crushed Oreos
- 1/2 cup crushed peppermint sticks
- 1 tsp vanilla
- 2 cups all purpose flour
- 1/4 cup white sugar
- 1/2 cup coconut sugar
- 1 cup room temperature butter
- 1 packet of sugar free, vanilla pudding mix
- 2 eggs
Directions:
1. Using a stand or hand mixer, combine your butter, white sugar & coconut sugar. Mix until a creamy batter starts to form.
2. Add in your eggs, vanilla and pudding mix. Make sure all ingredients are combined really well before starting to add your flour in.
3. 1/4 cup at a time, begin adding your flour. Before adding your next 1/4 cup, make sure the flour you have added is fully mixed into the batter.
4. Fold in your Oreos and peppermint pieces.
5. Drop by the tablespoon on a well greased pan.
6. Bake on 350 for 7-8 minutes (timing will vary depending on size of cookies) remove from oven immediately upon seeing edges brown to keep the cookies soft!
7. ENJOY THE HECK OUT OF THEM!
TIP: This is a large batch recipe that should yield around 20 cookies.
