BBQ Chicken Pasta Bake

Finding variety in dinner is a MUST to staying on track! No one wants to eat the same old boring dinner’s day in and day out. That is why I am ALL about finding, creating and TRYING new recipes.
Part of learning how to obtain a healthier lifestyle when it comes to eating, is debunking any stigmas you had towards certain food groups in the past. Some things that helped me get past this were
· Try foods you THINK you would not like, that maybe you have never tried before!
· Try foods AGAIN and AGAIN. Foods you may have disliked in the past, you may like now that you are older. Your pallet changes all throughout your life!
· Mix up the way you season and cook your foods! This will not only give you variety but it may also show you that, maybe you do not enjoy vegetables sautéed but you enjoy them grilled!
This BBQ Chicken Pasta Bake did not disappoint! I thought of two different meals (BBQ chicken & pasta) how I could put them together to make a new meal and here we are! It is oh so tasty, easy & requires little ingredients! EASY IS THE NAME OF MY GAME!
Ingredients:
· 1 ½ cup shredded rotisserie chicken
· 2 TBSP no sugar added BBQ sauce
· 6 ounces of Brown Rice Pasta
· 2 cups almond milk
· 1 cup shredded mozzarella cheese
· ¼ cup seasoned breadcrumbs
· 3-6 cloves of garlic
· 1 TBSP white flour
· 2 cups cooked cauliflower
· Pepper to taste
Directions:
1. Set oven to 400.
2. Cook pasta according to instructions on box.
3. While pasta is cooking, make sure your chicken is shredded and mix up with BBQ sauce & some pepper
4. Add garlic, milk and flour to a pot and heat until boiling. Stir around a few times to mix in garlic and flour.
5. Once boiled, slowly add in cheese while mixing and continue until you have a thick cheese base.
6. Combine cheese mixture, cauliflower and BBQ chicken with cooked pasta.
7. Pour into a casserole or baking dish, top with breadcrumbs and pepper.
8. Bake uncovered for 35-40 minutes.
