Peanut Butter Oatmeal Bars

When learning to maintain this lifestyle, I absolutely refused to give up GOOD FOOD. I made it a priority to learn how to turn food I already loved into healthier versions or to create recipes where I use substitutes that make my breakfasts, lunch, dinners and snacks, healthier versions.
I need VARIETY, I need REAL FOOD, I need GOOD FOOD. Count me out of a “diet”. I need attainable! I need a lifestyle that allows me to learn how to enjoy these healthier versions but also allows me to be “unhealthy” when I please!
These PEANUT BUTTER OATMEAL BARS are the perfect example of this. I saw a recipe that I thought I’d enjoy. Then when I checked out the ingredients list, it was filled with processed food and refined sugar. SO I crafted it up into a healthier version where I used substitutes in place of the processed food and refined sugar & turned it into something DELICIOUS AND HEALTHY!
ONE BOWL, 10 MINUTES PREP & 30 MINUTES TO COOK!
Ingredients:
· 1 cup of whole wheat flour
· 1 tsp baking powder
· 1 cup quick oats
· ½ cup unsweetened applesauce
· 2 ripe bananas
· 1 tsp ground cinnamon
· 1 eggs
· ½ cup creamy peanut butter
· 1/3 cup coconut sugar
Directions:
1. Set oven to 350 degrees.
2. Combine all wet ingredients in a stand-mixer or hand-mixer. If you do not have a mixer, simply mash bananas first, then mix in all remaining wet ingredients.
3. Slowly add in all dry ingredients.
4. Once combined add to a 9 X 9 baking pan and bake for 30 minutes.
TIP: I added chocolate drizzle to some of them using 1 TBSP of chocolate chips and 1 tsp of coconut oil, heated & then drizzled!
