Chocolate Chip French Toast English Muffins

Breakfast is my FAVORITE meal of the day! I never skip out on breakfast, in fact, sometimes I have breakfast for lunch or dinner
Nothing makes my heart more full than when my family gathers together around my kitchen table and enjoys the food I make for them! Elaborate breakfasts are reserved for the weekends when we have time to slow down & enjoy food and each other!
These chocolate chip French toast English muffins were a huge HIT. This meal requires few ingredients, is a great option when serving a big crowd and are DANG DELICIOUS!
Ingredients:
· One pack (6 muffins) of 100 calorie whole grain English Muffins
· 4 eggs
· ¼ cup oat milk (or any non-dairy milk)
· 1 tsp ground cinnamon
· Handful of chocolate chips
· ½ tsp vanilla extract
· Whipped cream for topping
Directions:
1. Scramble eggs in a mixing bowl. Add milk, cinnamon and vanilla with eggs. Mix well until combined.
2. Generously dip each half of the English Muffins into egg mixture. TIP: Let soak in egg mixture for a minute-two.
3. Once egg mixture has absorbed into English Muffins, transfer to a non-stick pan and pan fry over medium heat until you start to see browning.
4. Flip once browning on one side begins. When you see browning on both sides, top with your chocolate chips and let sit in the pan for another minute-two.
5. Remove from pan & top with whipped cream!
