Pumpkin Marble Muffins

IT IS ALMOST PUMPKIN SEASON FRIENDS!
For those who know me, pumpkin season never ends for me! I get it—you either love pumpkin or you hate it! BUT what I will encourage you to do, is try recipes containing NATURAL PURE 100% pumpkin. Our society shoves pumpkin cookies, drinks, desserts and snacks into our face the second the clock strikes “fall” but all of these pumpkin items are artificially flavored. They absolutely do not have the same taste as pure pumpkin.
Pure pumpkin has so many health benefits because it is extremely high in Vitamin A!
1. Pumpkin is full of antioxidants that help in protecting your cells.
2. Pumpkin is highest in Vitamin A but also high in Vitamin C. Both these protect your immune system!
3. Pumpkin is a nutrient-dense food. Low in calories but packed with all the goods! Including fiber! Fiber is difficult to get extra of in your diet and many do not realize the impact fiber plays on your digestion.
4. Because of all the nutrients in natural pumpkin, this helps with skin elasticity and keeps your skin strong and healthy—who doesn’t want to look younger?!
Try to find a way to enjoy natural pumpkin in your diet a few times a month for all the added health benefits! It can be baked into goods, mixed into your oatmeal, eaten on its own, mixed into a smoothie or a meal replacement shake! Because of the consistency there are endless options on how you can add pumpkin into other foods.
These healthy pumpkin muffins have the PERFECT combination of that pumpkin flavor, mixed with a rich chocolate! They are A MUST TRY!
Ingredients:
· 1 cup pure pumpkin
· ¼ cup cocoa powder
· ½ cup coconut sugar
· 2 eggs
· 1 cup whole wheat flour
· 1 tsp vanilla extract
· 1 tsp baking soda
· 1 tsp ground cinnamon
· 1 tsp pumpkin pie spice
· ¼ cup melted coconut oil
· Desired amount of chocolate chips
Directions:
1. Set oven to 350 degrees.
2. In a large bowl, combine all wet ingredients.
3. Once combined, mix in dry ingredients EXCEPT FOR cocoa powder.
4. When mixed well, separate the batter into two bowls. In one bowl, mix in your cocoa powder (this will serve as the chocolate part of the muffin)
5. Scoop 1 TBSP of the pumpkin batter and 1 TBSP of the chocolate batter into each muffin liner.
6. Use a toothpick to stir two batters together while inside muffin liner to get the “marble” look.
7. Top with additional chocolate chips
8. Bake for 17-20 minutes.
9. ENJOY THE HECK OUT OF THIS HEALTHY PUMPKIN RECIPE!
TIP: If you prefer to avoid the pumpkin all together, you can swap one whole ripe banana with the pumpkin, omit the spices & you will have a delicious chocolate banana muffin! 🙂
