IS IT FALL YET?! Living in FL, the answer is absolutely not! But I will make the best of what I’ve got by baking up all the seasonal treats to enjoy throughout the remainder of my pregnancy and this year! 

Pumpkin combined with some Angel food mix & you’ve got this delicious moist but perfectly light & fluffy fall treat! 

Ingredients for Cake Bars: 

· ¼ cup unsweetened applesauce 

· 1 cup 100% pure pumpkin 

· ½ package of Angel Food cake 

· ½ tsp pumpkin pie spice 

· ½ tsp ground nutmeg 

· ½ tsp ground cinnamon 

· 1 egg 

· ½ tsp vanilla extract 

Ingredients for Frosting: 

· 1 TBSP dark chocolate chips 

· 1 tsp coconut oil 

Directions

1. Set oven to 350 degrees. 

2. Combine pumpkin, egg, applesauce and vanilla together until fully combined. 

3. Add in angel food mix & spices. 

4. Once combined pour into a 9 X 9 baking dish

5. Bake for 35-40 minutes

6. While cooling, combine chocolate chips and coconut oil in a microwave safe bowl to make frosting. Microwave for 30-40 seconds and stir, then drizzle all over cake bars. 

7. Let cool for an hour or longer before removing from pan and cutting into pieces.
