Apple Cinnamon Muffins

I am a TRUE snack queen! I can be found snacking all day everyday Luckily I find ways to keep snacking healthy AND delicious!
These muffins are the perfect on-the-go snack. They are moist, full of good-for-you ingredients, freeze well & are quick and easy to whip up!
Ingredients:
· ½ cup coconut flour
· 3 flax eggs
· 2 red apples (peeled & chopped)
· 2 TBSP coconut oil
· 1 tsp ground cinnamon
· ¼ cup maple syrup
· 1 TBSB coconut sugar
· 1 tsp apple cider vinegar
· ½ tsp baking soda
Directions:
1. Set oven to 350.
2. Begin peeling and chopping apples. Once fully chopped, add to apples with cinnamon (+ a drop a water) to a pan and cook stove top. Once apples look caramelized, remove from pan and set to the side to cool.
3. While apples are cooking, begin to make flax eggs (1 TBSP flax + 3 TBSP water for each flax egg)
4. Combine coconut flour, melted coconut oil, coconut sugar, maple syrup, baking soda & AVC in a bowl and combine. Once flax eggs are ready, add to bowl and combine.
5. Add half of your apple mixture to batter.
6. Begin to scoop batter into muffin pan. Fill ¾ of the way to the top.
7. Top off muffins with remaining apple mixture.
8. Cook for 12-15 minutes & ENJOY!
