Alright so I whipped up this recipe to have some muffins to give to my neighbors for Thanksgiving but they were SO good, that they were devoured in my house within 24 hours! 

So needless to say a second batch was need! They are sweet, moist, pack all the fall flavors you love & made with clean ingredients! The perfect go-to muffin for the holiday season! 

Ingredients

  • 1 cup whole wheat white four 
  • 1 tsp baking powder 
  • 1 tsp ground cinnamon 
  • 1/2 tsp cloves 
  • 1/2 cup coconut sugar 
  • 1/4 cup melted & cooled coconut oil 
  • 2 eggs 
  • 1 cup unsweetened applesauce
  • 1/2 cup almond/coconut milk 
  • 1 whole apple (cored, peeled and finely chopped) 
  • 1/4 cup pecans + 2 TBSP melted coconut oil + 1 TBSP cinnamon (for muffin topping)

Directions: 

1. Set oven to 350 degrees 

2. Combine all ingredients and mix well (excluding muffin topping ingredients)

3. Add in wet ingredients one at a time, combining and mixing well between each one (excluding muffin topping ingredients).  

4. Combine all ingredients in a separate bowl to make muffin topping. 

5. Once batter is formed, add around 2 TBSP of batter to a greased muffin tin. Then top each muffin with a small amount of the muffin topping. 

6. Bake for 15-20 minutes, or until a toothpick comes out clean.
