“Baby” Corn Fritters

Since my little girl started eating solids, I have been ALL about feeding her the best and have loved getting super creative in making her meals/snacks. 

I made my own baby purees for her once she started solids and exposed her to a TON of different food early on & let me tell ya–she is the BEST eater. She will eat anything you put in front of her! 

These corn fritters are a staple around here. I serve them as a snack, with breakfast, a few for lunch or as a side with dinner. They are quick & easy to make, have all clean ingredients and freeze well (which is perfect because the recipe will make a large batch!). 

Ingredients: 

  • 1 cup corn (frozen will do also) 
  • 3/4 cup whole wheat flour 
  • 2 TBSP honey 
  • 2 TBSP cheddar cheese 
  • 1 tsp baking powder 
  • 1/4 cup spinach (if frozen) 1/2 cup (if fresh) 
  • 1 egg
  • Dash of coconut milk (just to get desired consistency) 

Directions: 

1. In a high-speed blender or food processor, combine all ingredients. Blend until fully combined and you have a similar consistency to what you have when making pancakes. 

2. Heat a skillet with coconut oil and spoon 1 TBSP of batter onto skillet for each fritter. 

3. Cook until fritters appear just golden brown & then remove from skillet. 

4. ENJOY! 

*These will stay good in the refrigerator for 5-7 days or work perfect when frozen and taken out a few hours prior to serving*
