Contrary to popular belief, making brownies is ACTUALLY very difficult. There’s a lot that goes into make sure a brownie has a perfectly moist center, without a burnt top & actually taste good!

But I have nailed this recipe because it meets all the above qualifications if I do say so myself. My 1 year-old daughter also agreed as she could not shove the brownie into her mouth quick enough–although we’ll keep her out of it because she will eat anything I serve to her ‍♀️

Ingredients: 

  • 3 over-ripe bananas 
  • 1/2 cup cacao powder 
  • 1/2 cup creamy peanut butter 
  • 2 eggs 
  • 3 TBSP coconut sugar 
  • 1/4 tsp baking soda 
  • 1/2 cup chocolate chips 

Directions: 

1. Preheat oven to 350 degrees 

2. In a large bowl, mash bananas and mix well. Add in peanut butter, reserving a little peanut butter for the top of the brownies and eggs. Combine until a batter begins to form. 

3. Add in cacao powder, coconut sugar and baking soda. Mix well. 

4. Pour into an 8 X 8 baking dish. Top with remaining peanut butter and use a toothpick to smear peanut butter into batter. Top with chocolate chips. 

5. Bake for 8 minutes, remove from oven & “slam” onto counter top. This will help the brownies not to stick to the pan and give the perfect consistency. 

6. Put back in oven for another 12 minutes and remove once center is cooked.
