Breakfast Casserole

Breakfast is my favorite, no question about it. BUT it actually is ALSO the most important meal of the day. Breakfast replenishes your supply of nutrients and boosts your energy levels and alertness. So don’t skip your breakfast y’all!
This is by far the quickest way to make a casserole! Its packed with flavor, with protein & veggies! It takes only minutes to prep and 10 minutes of cooking and will keep you full for hours.
Ingredients:
- La Banderita carb counter wrap (can use any tortilla here but this one keeps it lower calories)
- 3 eggs
- handful of fresh spinach
- handful of chopped tomatoes
- 2 TBSP cheddar cheese
- Salt & Pepper (for added flavor)
- Dash of garlic powder & onion powder (for added flavor)
Directions:
1. Set oven to 350 degrees.
2. In a round baking dish, spray inside with a cooking spray so tortilla does not stick.
3. Crack eggs inside of tortilla.
4. Add your salt, pepper, garlic powder and onion powder,
5. Top with your spinach and tomato, then add cheese last.
6. Bake for 10 minutes & ENJOY!
