Buffalo White Chicken Chili

This chili recipes trumps them all! All made in the crockpot,  comes together in 5 minutes and makes a large portion! So enough to serve a crowd or freeze and save for another meal! 

Ingredients: 

  • White & dark meat from a rotisserie chicken 
  • 1 tbsp garlic powder 
  • 2 tsp cumin 
  • 1 tsp chili powder 
  • 1 cup corn (frozen or fresh) 
  • 1 cup low sodium chicken broth 
  • 2 cans fire roasted tomatoes w/ green chiles (omit one can if you prefer less spice) 
  • 2 cans white cannellini beans 
  • 1/2 cup buffalo sauce (I used primal kitchen) 
  • 4 ounce low-fat cream cheese 
  • 1 cup 2% cottage cheese 

Directions: 

1. Combine all ingredients into a crockpot except for your cottage cheese and cream cheese. 

2. Cook on high for 3-4 hours or on low for 5-6 hours. 

3. Before serving, combine cottage cheese and cream cheese into a food processor (or blender) and blend until smooth. 

4. Add in cheese mixture to crockpot and combine with chili. 

5. Enjoy! Top with a lime, mozzarella cheese, cilantro, tortilla chips, etc.!
