Chocolate Chip Banana Muffins *Allergen Friendly*

Elimination diets put a new spin on eating healthy/clean! I can proudly say I have not eaten one thing that comes from a bag/box for over a week now. I never realized how difficult elimination “convenience foods” from my diet would be!
I have always been big on having my own snacks prepared and handy because if I dont, then I will start grabbing ALL the junk!
I have had to revamp almost every one of my recipes that I typically use because they contain allergens that I currently have eliminated from my diet. While not easy, I am grateful for this because I am
1. Getting to test out new recipes
2. Expanding my horizons & love for food even more!
These chocolate chip banana muffins are moist, light, have natural sweet flavor & SUPER healthy!
Ingredients:
· ½ cup coconut flour
· 3 TBSP coconut oil
· ½ tsp baking powder
· ½ tsp baking soda
· ½ tsp cinnamon
· ½ tsp cloves
· ½ tsp nutmeg
· ¼ cup honey
· 2 overly ripe bananas
· 4 flax eggs (or four whole eggs)
· Desired amount of allergen free chocolate chips (I use enjoy life)
Directions:
1. Set oven to 350 degrees.
2. Make flax eggs by mixing water and ground flax together. Let sit until gel-like substance forms.
3. Mash your bananas & combine all remaining ingredients once your flax eggs are ready.
4. Top with chocolate chips
5. Bake for 15-18 minutes & enjoy!
