Chocolate Mousse

  

Feast your eyes on the best tasting *healthy* chocolate mousse! This recipe is SO easy and the absolute perfect way to satisfy your sweet tooth craving! 

Ingredients: 

· ½ cup cooked, skinned & mashed sweet potato 

· 1/3 cup peanut butter 

· 1/3 cup coconut milk

· 2 TBSP maple syrup 

· 1 TBSP pure honey 

· 1 tsp vanilla extract 

· 2 TBSP cacoa powder 

Directions: 

1. Cook your sweet potato, skin and cut into smaller pieces. 

2. Add sweet potato and coconut milk to a food processor (or blender) and mix until smooth consistency. 

3. Add peanut butter, vanilla, maple syrup, honey and cacoa powder to food processor and mix again until you have a thick smooth consistency.

4. Serve into portion cups!
