Chocolate Pudding Pie
Chocolate Pudding Pie

Chocolate cream pie is my FAV! I decided to get my creative juices flowing & figured out how to whip up a HEALTHIER version of chocolate cream pie. It does NOT disappoint!

The homemade pie crust is FOULPROOF with just four ingredients and the chocolate pudding contains all clean ingredients, no refined sugar and is SO rich!

It took maybe 30 min MAX to put this together (including the cooking time) and that was with my 1-year-old “helping” (AKA making a huge mess) through the process

Ingredients for Pie Crust:

  • 1/4 cup melted & cooled coconut oil
  • 3/4 cup pecans
  • 3 TBSP coconut sugar
  • 1 cup quick cooking oats

Ingredients for Pudding:

  • 2 overripe bananas
  • 1/4 ripe avocado
  • 1/2 cup peanut butter
  • 1 tsp vanilla extract
  • 2 TBSP honey (maple syrup or agave will work also)
  • 3 TBSP cacao powder (omit 1 TBSP if you prefer less rich chocolate)
  • Desired topping (I used shredded coconut and chocolate chips)

Directions:

1. In a food processor, combine all ingredients for the pie crust. Blend until fully combined/chopped.

2. Press into an 8-inch pie dish and bake on 350 for 15-17 minutes.

3. While pie crust is cooking, clean food processor.

4. Add all ingredients for pudding (except topping) to food processor and blend until fully combined.

5. Once pie is cooked, remove from oven and let cool at least 30 minutes before topping with your chocolate pudding.

6. Once cooled, top with pudding & toppings then let pie set in fridge for 1-2 hours before serving. ENJOY!
