I am all about convenience! If it’s not easy, count me out! As I prepare to bring my baby girl into this world, I realize things are going to go from organized to crazy REAL quickly! For me it’s important to maintain eating healthy. My body will need to heal after giving birth and most importantly, will need to make milk to feed my little babe! That means what I put in my body matters! 

At all costs, I am trying to avoid under-eating, snacking, binging on food throughout the day and eating out. Over the past few weeks I have been working on making big batches of food that I can freeze so that I have this food handy to grab when my days get crazy! 

These freezer prep egg sandwiches are less than 200 calories, they are delicious, WAY healthier than anything you could grab locally or even from your grocery store and are the perfect balance of carbs, fats and protein! 

For someone keeping track of their calories these sandwiches are great to meal prep on the weekends and have handy during the week! For me, right now I am not concerned about the calories but they are still a great go-to for when baby arrives! 

Ingredients: 

· 6 eggs 

· 6 whole grain 100 calorie English muffins 

· 3 slices of colby jack sliced thin Sargento cheese

Directions: 

1. Toast all English muffins 

2. Cook eggs on a skillet—SEE TIP BELOW FOR HOW TO GET THE PERFECT CIRCULAR EGG! 

3. Once egg is cooked, place onto English muffin with half a slice of cheese and press sandwich together! 

4. Either store in a freezer safe container or freezer safe bag. 

TIP: To get your perfect circular egg, use the top of a mason jar on a skillet, spray with EVOO or non-stick cooking spray. Crack your egg directly inside the mason jar top and flip half way through!
