Gingerbread Loaf

A perfect, healthy spin on everyone’s favorite Starbucks gingerbread loaf. 

Ingredients

  • 1/2 cup softened butter 
  • 1/2 cup coconut sugar 
  • 1 tsp vanilla 
  • 1 egg 
  • 1 cup unsweetened applesauce 
  • 1 1/2 cup white flour
  • 2 tsp ground cinnamon 
  • 1 tsp ground ginger 
  • 1 tsp ground cloves 
  • 1/2 tsp ground nutmeg 

Ingredients for Frosting: 

  •  1/4 cup plain nonfat greek yogurt 
  •  1 cup powdered sugar 
  •  Sprinkles (optional) 

Directions: 

1. In a stand mixer or with a hand mixer, combine butter & sugar until it appears fluffy in texture. 

2. Beat in egg, vanilla & applesauce. 

3. In a separate bowl, combine the remaining ingredients for your loaf and make sure they are well combined. 

4. Slowly add dry ingredients into wet ingredients & mix well. 

5. Pour into a greased 9 X 5 baking loaf. 

6. Bake on 350 degrees for 35-40 minutes. 

7. While loaf cools, combine ingredients to make your frosting (powdered sugar and greek yogurt) 

8. Once loaf is fully cooled, top with frosting & sprinkles.
