A healthy spin on the ever-so-famous Lemon Ricotta pancakes! These pack just as much flavor, have the perfect sweet & tangy taste & the cottage cheese adds lots of protein! 

In my opinion there is NO BETTER breakfast than a stack of pancakes SO I am always looking up ways to create delicious, healthy versions! 


Ingredients: 

  • 1 ripe banana 
  • 2 tbsp melted coconut oil 
  • 1/2 lemon (squeeze juice) 
  • 1 cup 2% cottage cheese 
  • 1/4 cup coconut milk (or almond) 
  • 2 tbsp maple syrup (or honey) 
  • 2 eggs 
  • 1 tsp baking powder 
  • 1 & 1/2 cup oat flour (blended oats) 
  • 1 tsp ground cinnamon 
  • Zest from 1 lemon 
  • 1 tsp vanilla extract 


Directions:

  1. Mash banana & add cottage cheese, milk, maple syrup, lemon juice, vanilla extract and eggs. Mix well until combined. 
  2. Add in oat flour, cinnamon, baking powder & mix until batter forms 
  3. Pour coconut oil in & mix slowly until combined 
  4. Add lemon zest & lightly combine 
  5. Scoop 2 tbsp worth of batter for each pancake & pan fry on low/medium heat. Cook until they appear just to be golden brown. 
  6. You can store in the fridge for 4-5 days or these babies freeze well also! ENJOY!
