Lemon Cottage Cheese Pancakes

A healthy spin on the ever-so-famous Lemon Ricotta pancakes! These pack just as much flavor, have the perfect sweet & tangy taste & the cottage cheese adds lots of protein!
In my opinion there is NO BETTER breakfast than a stack of pancakes SO I am always looking up ways to create delicious, healthy versions!
Ingredients:
- 1 ripe banana
- 2 tbsp melted coconut oil
- 1/2 lemon (squeeze juice)
- 1 cup 2% cottage cheese
- 1/4 cup coconut milk (or almond)
- 2 tbsp maple syrup (or honey)
- 2 eggs
- 1 tsp baking powder
- 1 & 1/2 cup oat flour (blended oats)
- 1 tsp ground cinnamon
- Zest from 1 lemon
- 1 tsp vanilla extract
Directions:
- Mash banana & add cottage cheese, milk, maple syrup, lemon juice, vanilla extract and eggs. Mix well until combined.
- Add in oat flour, cinnamon, baking powder & mix until batter forms
- Pour coconut oil in & mix slowly until combined
- Add lemon zest & lightly combine
- Scoop 2 tbsp worth of batter for each pancake & pan fry on low/medium heat. Cook until they appear just to be golden brown.
- You can store in the fridge for 4-5 days or these babies freeze well also! ENJOY!
