Peppermint Mocha Loaf

Peppermint mocha is my most loved flavor when it comes to Winter! I am a coffee lover by default so add in the word “mocha” and I am there!
This Peppermint Mocha loaf satisfies all your coffee & peppermint desires but in a bread with a delicious Greek yogurt frosting, healthier ingredients & SO easy to make!
I create all of my loaf recipes so that they freeze well because I am baking and making food so often, that there is no way our house can eat it all before it goes bad! This loaf will freeze perfectly so you can save it for a rainy (or snowy) day .
Ingredients:
- 2 cups whole wheat flour
- ¼ tsp peppermint extract
- ½ cup coconut sugar
- 2 eggs
- 2 TBSP melted coconut oil
- 1 packet instant coffee grounds
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla extract
- 2 TBSP greek yogurt + 1 TBSP powder sugar (for icing)
- sprinkles & crushed candy cane (for topping)
Directions:
- Set oven to 350 degrees.
- Combine all dry ingredients & combine well.
- Slowly add in wet ingredients one at a time and mix until a think batter is formed.
- Pour batter into a greased loaf pan and bake for 20-25 minutes.
- Let cool enough to be able to handle. Once cooled, remove from loaf pan and apply icing mixture to the top.
- Top with sprinkles and crushed candy cane & ENJOY!
