Sweet Potato Honey Biscuits

Take my word for it, these are the HOLY GRAIL of biscuits. Throw away your buttermilk biscuits recipes, forget Pillsbury even exists and add these into your life!
Sweet, doughy, moist & a CROWD PLEASER!
Ingredients:
- 2 large sweet potatoes (should add up to about 1 cup)
- 4 TBSP cooled coconut oil
- 1/2 cup almond milk
- 1 tsp apple cider vinegar
- 1 & 1/4 cup whole wheat flour
- 1 TBSP baking powder
- 1/4 cup coconut sugar
- 3 TBSP pure honey
Directions:
1. Set oven to 425 degrees.
2. You will need to create your “buttermilk” in one bowl using the apple cider vinegar and 1/3 cup almond milk. Once mixed well, let sit and work with remaining ingredients.
3. In another bowl add sweet potatoes, remaining milk, coconut sugar, baking powder, 2 TBSP of honey and combine. DO NOT overmix!
4. Fold in “buttermilk”.
5. Flour a surface and begin rolling out dough into desired thickness. Use a circular top to cut into biscuit shapes (I used the top of a mason jar) but any container, cup, etc. will work!
6. Place biscuits onto a greased baking pan and bake for 10 minutes.
7. Once cooled, drizzle the remaining 1 TBSP of honey over biscuits & ENJOY!!!
