Homemade Apple Pie

Nothing & I mean NOTHING compares to the smell of a homemade apple pie being baked in your house! It is the ultimate comfort dessert and it truly does not get any better than a slice of apple pie with a scoop of vanilla ice cream on top.
There are tons of apple pie recipes out there and I have tested and tried TONS. This one is the VERY BEST because of a special, bakers secret .
It takes a little more time than a normal apple pie would, but its worth the extra time and work! Trust me on this! Sitting overnight will be the KEY component here!
Ingredients:
- 2 sheets of homemade pie crust
- ¼ tsp fresh lemon
- 8-10 granny smith green applies (peeled & cored)
- 1 tsp vanilla extract
- 2 tsp ground cinnamon
- 1 tsp nutmeg
- ½ granulated white sugar
- ¾ cup light brown sugar
- 2 TBSP butter (or coconut oil)
Ingredients for pie crust *DOUBLE RECIPIE FOR 2 PIE CRUSTS* :
*You can use the option of a pre-made pie crust here. If you prefer to make your own, follow the below*
- 1 & ¼ cup all-purpose flour
- 1 tsp coconut sugar
- 1 tsp salt
- ½ cup cold butter (cut into tablespoon sized cubes)
- ¼ cup water
Directions for pie crust:
- Combine all ingredients, except water in a large bowl.
- Work in butter cubes by using a butter cutter or a butter knife. Do NOT overmix here!
- Once dough is formed into a crumbly texture, add in your water.
- Work the dough together by kneading with your hands on a floured surface.
- Once formed into a ball, start to roll out to desired thickness.
- Carefully transfer to your pie dish that you will be baking your pie in.
Directions for pie filling:
- Set oven to 400 degrees.
- Core and peel all of your apples.
- Slice the applies into small cubes, thin slivers, etc. (your desired shape!) and place into a large bowl.
- In another bowl combine lemon, brown sugar, granulated sugar, cinnamon, vanilla and nutmeg.
- Pour this mixture on top of the apples and rub all over so that all apples obtain the mixture.
- HERE IS THE SECRET PART—let this mixture SIT OVERNIGHT!
- Give at least 24 hours for the apple mixture to sit. The following day, add this mixture into a pot with the 2 TBSP of butter and cook on low until most of the liquid has been absorbed.
- Pour mixture into your bottom pie crust.
- With the second pie crust, cover your pie how you please! I choose a lattice design but the options are endless here!
- Cover your pie with aluminum foil and place in the oven at 400 degrees for 10 minutes.
- Turn down the temperature of your oven to 325 degrees, uncover your pie and bake for another 30-40 minutes.
