These chocolate peppermint muffin tops are the BEST way to wow your friends and family this year for the holidays! They’re the perfect version of healthy and festive WITHOUT anyone knowing they are healthy! 🙂 

They only require one bowl, a few ingredients & 15 minutes! 

Ingredients

· 1 whole sweet potato (cooked, skinned and mashed) 

· 2 TBSP whole wheat flour 

· ¼ tsp baking powder 

· ¼ tsp peppermint extract

· 3 TBSP coconut sugar 

· 2 TBSP cocoa powder 

· 2 TBSP peanut butter 

· Desired amount of chocolate chips & crushed candy cane

Directions

1. Set oven to 350 degrees. 

2. Cook and skin sweet potato, then mash into a bowl. 

3. Combine all remaining ingredients except chocolate chips and crushed candy cane. 

4. Spoon into a muffin pan ONLY filling HALF way! This will give you the “muffin top” look! 

5. Top with chocolate chips and crushed candy cane and bake for 15 minutes
