Fall Harvest Salad with Honey Dijon Dressing

SWEET OR SAVORY?! I am generally a savory salad gal. Ya know, olives, onions, cucumbers… but I have been LIVING for these fall harvest salads lately.
This salad comes together so easy with all the good-for-you ingredients, is sweet and just the perfect little creation for all those fall vibes!
I made the perfect, lightened up version of honey dijon dressing to go along with it & the dressing is the icing on the cake (salad )
Ingredients for Salad:
- 2 cups sautéed kale
- 2 TBSP dried cranberries
- 1 TBSP sunflower seeds
- 3-4 chopped beets
- 1/2 cup butternut squash
- Sprinkle of feta cheese on top
Ingredients for Dressing:
- 1/4 cup EVOO
- 1/4 cup pure honey
- 1/4 cup plain nonfat Greek yogurt
- 2 TBSP Dijon mustard
- 1 TBSP apple Cider Vinegar
- dash of salt and pepper to taste
Directions:
1. Throw all your kale into a pan with a drop of water and sauté on low until kale appears to be slightly welted. Remove from pan and add to your bowl.
2. Chop beets and butternut squash & add to your kale mixture.
3. Top with cranberries, sunflower seeds & sprinkle with feta cheese.
4. In a jar or large bowl, add all your ingredients for your dressing. If you have a frother or hand mixer, this is best to combine your ingredients. If you do not have either, use a whisk and continue to whisk for several minutes until you have a thick creamy texture & your ingredients are combined.
5. Pour desired amount of dressing over salad and ENJOY!
