Pumpkin Spice Granola

Is granola even granola without those GIANT CLUSTERS? NOPE! This homemade pumpkin spice granola is full of cluster-y goodness and packs all the fall flavors!
This is a large batch recipe, requiring little ingredients & easy but of course, HEALTHY!
Ingredients:
- 3 cups quick cooking oats
- 1/4 cup coconut oil (melted)
- 1/4 cup pumpkin puree
- 1/4 cup peanut butter
- 1/2 cup mini chocolate chips
- 1/2 cup dried cranberries
- 1/4 cup pumpkin seeds
- 1 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/3 cup pure honey
Directions:
1. Set oven to 325 degrees
2. Add oats, spices, chocolate chips, cranberries & pumpkin seeds to a large bowl and combine.
3. In another bowl, mix together pumpkin puree, coconut oil, peanut butter, vanilla & honey. Mix well until combined.
4. Slowly add wet mixture to dry mixture. Make sure dry mixture is entirely covered by wet mixture.
5. Grease a large cookie sheet and press granola mixture into a thin layer.
6. Bake for 25-30 minutes. DO NOT MIX during cooking process.
7. Remove from oven. Your granola may not look crispy immediately but give it time to settle and it will harden. You can then break off into pieces and get the giant cluster goodness you are after!
