Apple Spice Oatmeal Bread

I always have some kind of dessert bread around the house for my family to snack on! Very rarely do I buy things like coffee cakes, muffins, banana breads, etc. from the grocery store because they are filled with ingredients that are not-so-good for you & you will spend more money than making it yourself!
So I love to get creative & whip up these new creations. This one DOES NOT disappoint. Its gooey center, naturally sweet taste & frosting top are everything bread dreams are made of
Ingredients:
- 1 cup coconut sugar
- 1 egg
- 1/4 cup coconut oil + 1 TBSP for sautéing apples
- 4-6 peeled & chopped apples (apple of choice)
- 1/2 tsp nutmeg
- 1 tsp ground cinnamon
- 1 cup almond milk
- 2 & 1/2 cups oat flour (quick cooking oats blended up to a fine grain)
- 2 tsp baking powder
- Additional cinnamon and nutmeg (desired amount) to sauté apples.
Ingredients for Frosting:
- 2 TBSP nonfat Greek yogurt
- 1 tsp confectionery sugar
Directions:
1. Set oven to 350 degrees.
2. Peel and chop all of your apples. In a large pan, melt 1 TBSP coconut oil. Once melted add your apples & desired amount of nutmeg and cinnamon to pan. Cook on a low heat until apples appear to be glazed and soft in texture. Remove from heat and set to the side.
3. In a large bowl, add your coconut sugar, oat flour, baking powder, nutmeg and cinnamon and combine.
4. Then add your egg, (melted) coconut oil and almond milk and mix well.
5. Slowly fold in your apples to mixture.
6. Add mixture to a loaf pan and bake for 40-50 minutes.
7. During this time, mix your frosting ingredients together.
8. Once bread is removed from oven and has cooled, add your frosting on top & ENJOY!
