I will start off by saying that I never in a million years imagined these to taste as good as they do ESPECIALLY with only testing this recipe ONCE! I will officially be making every variation of these starting today. 

They come together super quick & easy, are packed with nutrient dense ingredients and are healthier than any protein bar you’ll find on the market! 

Ingredients

  • 1/4 cup pumpkin puree 
  • 1 tsp cinnamon 
  • 1 TBSP pumpkin pie spice 
  • 1 tsp cloves 
  • 3-4 dates (depending on size, for bigger dates, stick to 3) 
  • 2 TBSP agave (maple syrup or honey works also!) 
  • 1/4 cup vanilla protein powder (I used Orgain) 
  • 1/2 cup creamy almond butter (any nut butter works) 
  • 3 TBSP melted coconut oil 
  • 1/2 cup quick cooking oats 
  • 1/2 cup white chocolate chips + 1 heaping TBSP coconut oil (for frosting) 

Directions

1. Combine all ingredients into a food processor or high speed blender and mix well until fully combined. 

2. Press mixture into a loaf pan or baking dish of some sort so that you can cut into bars once fully set. 

3. Begin melting your white chocolate chips and coconut oil for your frosting. Microwave in 30 second intervals until fully melted.

4. After mixture has pressed into a pan/baking dish, top with frosting. Place in freezer for 30 minutes to an hour to let the bars set. 

5. Once set, cut into bars and keep stored in the freezer or fridge! ENJOY!
