Garlic Avocado Sauce

  

The tastiest-lightest-healthiest version of pasta sauce there ever was! 

Minimal ingredients & free from all major allergens. You will need a food processor (or blender of some sort) for this recipe but it is otherwise SO easy! 

Ingredients: 

· ½ ripe avocado 

· 6 cloves roasted garlic (peeled)

· ½ freshly squeezed lemon 

· 1 TBSP EVOO 

· Dash of black pepper 

Directions: 

1. Set oven to 400 & roast your whole cloves of garlic for 20 minutes. 

2. Once garlic cloves are roasted, combine with your avocado, lemon juice, EVOO and pepper in a food processor or blender. 

3. Blend on high until fully combined and no longer chunky but a thick, creamy consistency. If too thick, add additional lemon juice or a little extra EVOO. 

4. Pour onto pasta & enjoy!
