Chocolate Cake with Greek Yogurt Frosting

  

Meal prepping for me includes prepping delicious little snacks that I have handy when I want something sweet or prepping what I will have for dessert, because let’s face it- I NEVER skip dessert! If I do not have these healthier snacks on hand, I will start reaching for unhealthier food choices like cookies, packaged snacks, ice cream… 

Save yourself from that regret & bake up this sweet, clean, easy, chocolate cake! 

Ingredients For Cake: 

· ¼ cup cocoa powder (a little less if you want it less rich, a heaping amount if you like it really rich) 

· ¼ cup coconut flour (can sub regular flour)

· ¼ cup coconut sugar 

· ¼ tsp baking soda 

· ½ tsp baking powder 

· 1 medium shredded zucchini 

· 3 eggs 

· 2 TBSP coconut oil 

· 3 TBSP HOT almond/coconut milk 

Ingredients For Greek Yogurt Frosting: 

· 2 TBSP Greek Yogurt (or any yogurt) for every ¼ cup of powdered sugar. 


Directions: 

1. Set oven to 350. 

2. Shred zucchini. 

3. In a large bowl, combine all wet ingredients. 

4. Slowly add in all dry ingredients. 

5.  Pour into a 6 inch pan. 

6. Bake for 20 minutes. 

7. While baking make your frosting. 

8. Remove cake from oven and let cool for a full hour or longer before frosting. 

9. ENJOY THIS HEALTHY DESSERT OR SNACK! 

TIP: You ABSOLUTELY cannot taste any zucchini in this recipe! The sole purpose of the zucchini is to keep the cake moist & it is SO moist!
