The PERFECT go-to dinner recipe when that carb craving hits! I am all about clean dinner recipes! This recipe contains such little ingredients but packs a huge flavor. Best part – you and your guests will never know it’s a secretly healthy lasagna! 😉 

Ingredients: 

· 2 cups of marinara sauce—I make my own but any store-bought marinara will do. When I do not have any of my own on hand, I use Trader Joe’s marinara! 

· 1 box of lasagna noodles (will have extra) 

· 2 cups 2% low-sodium cottage cheese 

· 1 lb lean ground turkey 

· 6 cloves fresh pressed garlic 

· ½ cup skim shredded mozzarella cheese

· Desired amounts of Italian seasoning, garlic powder, onion powder, oregano & pepper 

· Fresh rosemary for topping 

Directions: 

1. Set oven to 350 degrees 

2. Brown ground turkey, stove top with fresh pressed garlic and all spices. I use about ½ tsp of each spice. 

3. Once turkey is completely cooked, combine with 1 & ½ cup of marinara sauce, all cottage cheese and ¼ cup shredded mozzarella. 

4. Using a 9X9 baking pan, spread just enough marinara to cover the bottom of the pan—this will avoid the noodles from getting stuck to the bottom! 

5. Line entire pan with 6 lasagna noodles. 

6. Pour half the meat mixture on top of the noodles. 

7. Stack 6 more noodles on top of the meat mixture. 

8. Pour remaining meat mixture on top of second set of noodles. 

9. Add a little extra sauce to the top of the meat mixture and top with remaining mozzarella. 

10. Bake for 30 minutes covered with aluminum foil. Uncover and bake for another 10 minutes. 

11. Set oven to broil for 5 minutes to get that bubbly, crispy cheese, top! 

12. Top with fresh rosemary. 

It may seem like a lot of steps, but they are QUICK, EASY steps! This recipe takes less than 20 minutes to prepare and the rest is done in the oven! 

Yields: 6 LARGE slices. If cooking for two, this will be enough for one serving and you can freeze the other half for another dinner!
