Honey Lemon Cheesecake

This might be the EASIEST & most DELICIOUS cheesecake recipe you’ll ever make! I do not even like cheesecake and this was bomb!
I am all about making special pies, cakes, etc. for birthdays so I decided to give this cheesecake a try for my grandfathers birthday and it was a HIT.
Ingredients:
- 30 ounces full-fat ricotta cheese
- 9 inch graham cracker crust (can opt to make your own crust here but I used a pre-made one)
- zest from 1 lemon
- 1/4 cup coconut sugar
- 1/3 cup honey
- 1/2 cup heavy whipping cream
- 1 tsp vanilla extract
- 4 eggs
Directions:
1. Set oven to 350 degrees
2. Add your ricotta cheese, lemon zest, coconut sugar, honey, vanilla extract and eggs to a food processor and blend until fully smooth & combined.
3. Pour mixture into your pie crust
4. Lightly cover with a sheet of aluminum foil and bake for 30 minutes.
5. Uncover and bake for another 10-15 minutes until you start to see the edges browning.
6. Remove from oven and store in fridge for at least 3 hours before serving.
