WAFFLE OMELETTE: MY FAV WAY TO MEAL PREP EGGS

Okay so eggs can be a weird food to meal prep, they 100% do not taste the same once cooked & reheated. But life as a mom doesn’t always mean the most glamorous meals… it generally means any food available & cold coffee  

So here’s a quick on-the-go way to meal prep eggs and have an easy, healthy, protein packed breakfast ready at your fingertips!

The best tip I can give to someone who wants to commit to eating healthier is to have healthy meals and snacks ready for you when you’re hungry. It’s impossible to ALWAYS find the time to make or cook a healthy meal whenever you’re ready to eat—making you more inclined to grab something unhealthy. MEAL PREP is not just some glorious “influencer” word ITS A WAY OF LIFE YALL! 

*Recipe yields 4 waffle omelette’s*

My Ingredients—any of your preferred ingredients will work!  

· 6 whole eggs 

· ¼ cup almond milk 

· Handful of baby spinach 

· Chopped peppers and onions 

· Chopped mushrooms 

· 3 slices of Canadian bacon 

· Everything but the bagel seasoning 

Directions:

1. Prep your waffle iron on medium heat.

2. Combine all ingredients together & mix well. 

3. Pour one ladle-sized amount onto waffle iron and cook for 3-5 minutes. 

4. Store in an air-tight container in the refrigerator for up to 5 days. 

5. I reheat mine in the oven for a minute-two before eating but reheat with whatever option you have available!
