Double Chocolate Chip Mini Muffins

I am ALL about MINI everything! Sometimes you just want that quick bite to crave your sweet tooth or a small snack and a “full size” anything is too much. 

These are the best to have on hand. They are clean, a perfect healthy alternative, delicious & man approved! 😉 

It took no more than 25 minutes including cooking time, to put these little babies together. ENJOY! 

Ingredients: 

· 1 flax egg (or 1 whole egg)

· ½ cup unsweetened applesauce 

· 3 TBSP coconut sugar 

· ½ tsp baking powder 

· ½ tsp baking soda 

· ½ cup whole wheat flour (or any flour will do!) 

· Splash of coconut milk 

· Desired amount of dark chocolate chips 

Directions: 

1. Set oven to 350 degrees. 

2. Make flax egg by combining one TBSP ground flax with 2.5 TBSP water. Let sit for 5 minutes. 

3. Once flax egg is ready, combine all wet ingredients. 

4. Mix in all dry ingredients except chocolate chips.

5. Once combined, fold in chocolate chips. 

6. Spoon into a greased, mini muffin pan. NO LINERS. 

7. Top with additional chocolate chips. 

8. Bake for 13-15 minutes. 

This recipe will yield around 10 muffins. Can be stored in the fridge for up to 5 days OR store in the freezer and pull out whenever you’re ready for them! 

TIP: Make this recipe 100% vegan by using vegan chocolate chips.
