Mug cakes take the CAKE as my favorite dessert! They are easy, delicious and the perfect serving size so you don’t over-indulge! 

The options for flavors and variety are endless! They also work to pre-make a few and reheat when you are ready to enjoy—life with a newborn means finding treats to indulge in…FREQUENTLY!  

Ingredients:  

  • ½ ripe banana  
  • ¼ tsp baking powder  
  • ¼ tsp poppyseeds  
  • Squeeze from half a lemon + some lemon zest  
  • 1 TSP ground flax  
  • 2 TBSP white flour  
  • 1 TBSP coconut milk  

Directions:  

  1. Set oven to 350 degrees.  
  2. Mash banana in a bowl.  
  3. Combine remaining ingredients  
  4. Pour into a ramekin/oven safe baking dish and bake for 20 minutes. You can ALSO microwave for 1 minute if you’re looking for a quicker route!
