These corn muffins are so versatile! Best with a bowl of chili but also perfect as a snack or something quick to grab for breakfast! 

Few, clean ingredients & VEGAN with the perfect amount of sweetness! 


Ingredients: 

· 1 cup cornmeal 

· 1 cup all purpose flour 

· ½ cup coconut sugar 

· 1 TBSP baking powder 

· 1 cup almond milk 

· 1/3 cup unsweet applesauce 

· ¼ cup 100% pure honey 

· 3 flax eggs (or sub for 2 whole eggs) 


Directions: 

1. Set oven to 350 degrees 

2. Make flax eggs by mixing 3 TBSP water with 3 TBSP of flax meal. If using regular eggs, skip this step! 

3. Combine all ingredients except flax eggs and mix well. 

4. Once flax eggs are ready, combine into batter. 

5. Pour into muffin molds and bake for 15 minutes.
