I’ll start out by saying that I made these and within 6 hours, my family had already devoured every last one. 

They are SO GOOD & I mean SO GOOD! I swapped some ingredients to keep them healthier but they pack the flavor & are the perfect texture of fluffy but also doughy & moist! 

They are a MUST MAKE if you’re looking to WOW an Easter crowd 

Ingredients: 

  • 1/2 cup melted coconut oil 
  • 1 egg 
  • 1 cup shredded carrots 
  • 1/2 tsp baking powder 
  • 1 tsp ground cinnamon 
  • 1 tsp vanilla extract 
  • 1 cup all purpose flour 
  • 1/2 cup coconut sugar 
  • 1/4 cup almond milk 
  • 1/4 cup seasonal M&M’s (or preferred topping) 

Ingredients for Butter Cream Frosting: 

  • 1 cup reduced fat cream cheese 
  • 1/4 cup butter 
  • 2 TBSP maple syrup 
  • 1 tsp vanilla extract 

*Beat or mix (very well) all ingredients together until a frosting forms* 

Directions: 

1. Set oven to 350 degrees 

2. In a large bowl, combine your egg, milk, coconut oil & vanilla and mix well. 

3. Add in your coconut sugar, flour, baking powder & ground cinnamon and mix until fully combined. 

4. Grease a donut pan and spoon batter into donut molds. 

5. Bake for 12 minutes 

6. While your donuts are baking, prepare your frosting. 

7. Let donuts cool for at least 30 minutes before frosting. Once cooled spoon frosting on top of donuts and sprinkle with M&M’s or topping of choice!

8. ENJOY THE HECK OUT OF THEM!
