Choosing to eat and live healthier means having snacks like these on hand at all times to grab when you’re hungry or a craving hits. Plus I have a 1 year old who eats more than I do so snacks are NECESSARY in this house 😉 

FOUR ingredients & a food processor/high speed blender is all you need for these! The recipe will make a large batch that freezes and stores well and they are made with real, whole food making them, literally, the PERFECT snack. 

Ingredients: 

  • 1/2 cup cashews 
  • 12-15 Medjool Dates 
  • 2 TBSP cacao powder 
  • 1/4 cup shredded unsweetened coconut 

Directions:

1. Soak your dates in water for 10-15 minutes to get them to a softer consistency. 

2. After dates have been soaking, drain and pit them. 

3. In your food processor or high speed blender, add your pitted dates, cocoa powder and cashews. 

4. Blend until ingredients have been fully combined and a sticky-like batter is formed.

5. Using a cookie scooper or tablespoon, scoop batter out and roll into small balls. 

6. Roll each ball in your unsweetened coconut to coat the outside. 

7. Store in fridge once complete & ENJOY! 

TIP: You want your batter to be a little bit sticky so that the coconut will adhere to the outside!
