Peanut Butter White Chocolate Brownies

Better than boxed brownies–there I said it ‍♀️ There really is nothing better than being able to serve my family delicious treats that I know are better for us and actually nourishing our bodies!

It takes minimal effort & minimal ingredients to make it happen.

These brownies are gooey, moist and rich in chocolate, just like boxed brownies would be. EXCEPT these brownies are made with clean ingredients and REAL food! Its amazing when you don’t have to feel guilty about consuming “treats” because your treats are actually good for you.

Ingredients:

  • 2 flax eggs
  • 1/2 cup peanut butter
  • 1/4 cup coconut sugar
  • 1/4 cup unsweetened applesauce
  • 2 TBSP cocoa powder
  • 1 tsp baking powder
  • 1 tsp of vanilla
  • 1/4 cup white flour
  • white chocolate chips for topping
  • 1/4 cup PB2 + 2 TBSP coconut milk (for frosting)

Directions:

1. Using 6 TBSP of water and 2 TBSP of ground flax, combine to make your flax eggs and let sit until a gelatin-like consistency forms.

2. Set oven to 350 degrees

3. Combine your peanut butter, applesauce, vanilla and flax eggs once ready.

4. Add in your cocoa powder, baking powder, coconut sugar and white flour. Mix well.

5. Once combined, pour into a greased baking pan and bake for 15-20 minutes.

6. While your brownies are baking, combine PB2 and milk to form your frosting. You want it to be a little thick so a small additional amount of PB2 may be required.

7. Once brownies have finished, let cool for 20-30 minutes.

8. Frost & top with white chocolate chips & ENJOY!
