I have SO much more respect for people who live with allergies! ITS NOT EASY! There is not nearly enough support, not enough recipes, restaurants do not clearly label their menus with allergens, nutritional labels fail to provide accuracy on allergens… the list goes on!  

While I personally never struggled with allergies, my breastfed baby, is. I have found its simpler to make and eat food in my own home, than to have to search the web high and low for allergen information or worry about cross contamination if I want to eat out!  

I am striving to prove that you can still enjoy GOOD, HEALTHY food that is EASY to make even while following a strict allergen diet!  

This dairy-free, creamy alfredo sauce is the perfect alternative to a standard alfredo—and hey, WAY HEALTHIER!  

Ingredients:  

  • 7-10 cloves of fresh garlic, chopped finely.  
  • ½ tsp oregano  
  • ½ tsp ground black pepper  
  • ½ tsp salt  
  • 2 TBSP flour of choice  
  • ½ cup almond milk  
  • ½ cup full-fat coconut milk  
  • 1 TBSP nutritional yeast  
  • Squeeze from half a lemon  
  • EVVO for roasting garlic  

Directions:  

  1. Chop or press your garlic and roast in a pot (large enough to add remaining ingredients). Roast garlic on low-medium heat. 
  2. Once garlic begins to brown, add coconut milk, almond milk, spices & nutritional yeast. Turn down heat & let simmer all together for 5-10 minutes.  
  3. Add in flour and stir for several minutes until sauce starts to thicken. Once desired thickness, remove from heat and add to pasta!
