The perfect post-workout snack—or really anytime snack  

5 ingredients & 5 minutes is all you need for these little babies. They freeze PERFECTLY so you can store some in the fridge for now & save some for later. BUT I actually prefer mine straight from the freezer. They give the ‘cookie ice cream sandwich’ feel straight from the freezer.  

FULL OF GOOD-FOR- YOU INGREDIENTS! GO GET BUSY!  

Ingredients:  

  • 5-7 medjool dates (depending on size)  
  • ¼ cup coconut flour  
  • 1 TBSP creamy peanut butter  
  • 1 TBSP sunflower seeds  
  • Handful of dried cranberries  

Directions:  

  1. Soak dates in a cup of cold water for 10-20 minutes.  
  2. Once dates have soaked, drain from water and add to a food processor. Blend on high speed until fully chopped.  
  3. Add in remaining ingredients & blend until combined.  
  4. Form into small balls & freeze for 30 minutes. You can either leave in the freezer or move to the fridge!  

TIP: Sub peanut butter for sunbutter & you have got yourself an allergen free snack! 🙂
