Pumpkin Cookie Skillet

PUMPKIN SEASON is in full swing ya’ll! You guys know how obsessed I am with pumpkin. BUT we eat pumpkin year round over here ♀️
Pure pumpkin puree actually has SO many health benefits so I try to sneak it into all my baked goods and meals whenever I can!
Being skillets are my new “thing” it’s only obvious that I had to create a pumpkin skillet for you!
ENJOY THE WHOLE DANG THING because this recipe is a healthy one 😉
Ingredients:
- 1 scoop Orgain pumpkin protein powder (any vanilla protein powder will also do!)
- 3 TBSP coconut flour
- 1 egg
- 1/2 cup pure pumpkin puree
- 1/2 tsp ground cinnamon
- 1/2 tsp pumpkin pie spice
- 1/4 cup unsweetened applesauce
- Desired amount of mini chocolate chips
Directions:
1. Set oven to 350 degrees
2. Combine all ingredients and mix well.
3. Grease an 8 inch skillet and pour batter into skillet.
4. Top with desired amount of chocolate chips and bake for 8-10 minutes.
