Pumpkin Stuffed Chocolate Chip Bars

TIS THE SEASON for PUMPKIN EVERYTHING! Basically from now until the end of the year, any recipe I can swap for pumpkin…I do!
BUT if you do not enjoy pumpkin as much as I, you can swap the pumpkin center for banana, strawberries, blueberries, really anything!
Ingredients:
- 2 cups of oat flour (quick cooking oats blended)
- 2 eggs
- 1 tsp baking powder
- 1/4 cup maple syrup
- 1/4 cup coconut sugar
- 1/4 cup creamy peanut butter
- 1/2 cup pure pumpkin puree
- desired amount of chocolate chips
- 1/2 tsp ground cinnamon
Directions:
1. Set oven to 350 degrees
2. Combine oat flour, eggs, baking powder, maple syrup, coconut sugar, peanut butter & chocolate chips. Mix well until fully combined.
3. Grease a loaf pan and scoop half of your dough into the loaf pan.
4. In the center add your pumpkin puree & ground cinnamon and make sure its spread in an even layer on top of dough.
5. Add in the remaining dough to the loaf pan, on top of the pumpkin puree. Spread evenly over the top of the loaf pan.
6. Add additional chocolate chips to the top.
7. Bake for 25-30 minutes & ENJOY!
