Single Serving Lemon Poppyseed Mug Cake

Mug cakes take the CAKE as my favorite dessert! They are easy, delicious and the perfect serving size so you don’t over-indulge!

Ingredients:
- ½ ripe banana
- ¼ tsp baking powder
- ¼ tsp poppyseeds
- Squeeze from half a lemon + some lemon zest
- 1 TSP ground flax
- 2 TBSP white flour
- 1 TBSP coconut milk
Directions:
- Set oven to 350 degrees.
- Mash banana in a bowl.
- Combine remaining ingredients
- Pour into a ramekin/oven safe baking dish and bake for 20 minutes. You can ALSO microwave for 1 minute if you’re looking for a quicker route!
