Put the Easter theme twist on them but they are for ANY occasion! 

If you got signed up to bring dessert to your Easter brunch/dinner this weekend, look no further for a recipe! This one will WOW your crowd and using most ingredients that you likely already have in the house! Just pick up your Easter themed candies to put on top and there ya go! 

Ingredients: 

  • 1 cup melted, then cooled coconut oil 
  • 1/2 cup coconut sugar 
  • 1/2 cup white sugar 
  • 1 tsp almond extract (or vanilla) 
  • 2 room temperature eggs 
  • 1 tsp baking powder 
  • 1/2 tsp salt 
  • 2 & 3/4 cup all purpose flour 
  • Desired candy topping 

Directions:

1. Set oven to 350 degrees 

2. Combine your coconut oil with sugars and mix well in a stand mixer, hand mixer or vigorously mix by hand with a whisk. 

3. Add in your eggs and extract and combine.

4. In a separate bowl combine your flour, baking powder and salt. Once combined, slowly add your flour mixture into your wet ingredient’s mixture. 

5. Once fully combined and your batter has formed, fold in your desired candy topping. 

6. Grease an 8X8 baking dish and pour batter into dish. Top with additional candy toppings. 

7. Bake for 18-20 minutes until you notice the edges browning. ENJOY!
