Carrot Cake Bites

The flavors in these small carrot cake bites are unreal! Only a handful of ingredients, mixed in one bowl (no food processor needed!), a perfect healthy snack made with all good-for-you ingredients!
My toddler devoured these so only one more reason to hop (no pun intended) on this recipe!
Ingredients:
- 1/2 cup oats
- 2 TBSP chopped pecans
- 1/4 cup creamy peanut butter
- 2 TBSP honey
- 1/4 tsp nutmeg
- 1 tsp ground cinnamon
- 1/2 tsp vanilla
- 1/4 cup shredded carrots
Directions:
1. Combine all ingredients in a bowl & mix well.
2. Using a tablespoon or cookie scooper, scoop batter and form into small bite sized balls.
3. ENJOY! They can be eaten immediately or stored in the fridge for later!
