Baked Apple Fritters

Enjoying ALL the seasonal foods at the moment! Somehow these baked apple fritters have made their way into my everyday diet
You can bake or pan-fry these babies! Baking will keep them a little bit healthier but I have tried both versions & both are amazingly delicious.
Ingredients:
- 2 cups of peeled, chopped apples
- 1 egg
- 1/2 cup coconut sugar
- 1 cup all purpose flour
- 1/2 cup coconut milk (or preferred milk)
- 1.5 tsp baking powder
- 1/2 tsp ground cinnamon
- 2 TBSP maple syrup
- 1 TBSP coconut oil & 2 TBSP chocolate chips (optional for chocolate drizzle)
Directions:
1. Set oven to 350 degrees.
2. Combine chopped apples with coconut sugar and maple syrup and coat well. Add to a large skillet and cook on low-heat for 5-10 minutes. Once apples appear caramelized, remove from heat and set aside.
3. Add flour, egg, milk, baking powder and cinnamon to a large bowl and combine.
4. Add this mixture to your apple mixture and mix well.
5. Begin to form fritters by adding 2 heaping tablespoons of batter to a cookie pan greased cookie pan.
6. Cook fritters for 6-7 minutes.
7. If wanting to add chocolate drizzle, microwave 2 TBSP chocolate chips with 1 TBSP coconut oil and drizzle over fritters once removed from the oven. ENJOY!
