Apple Cinnamon Protein Waffles

Let the FALL festivities begin! Fall is my absolute favorite time of year and I LOVE getting creative in the kitchen enjoying all these seasonal flavors!
These waffles are the perfect breakfast combo because they will curb that craving for a giant stack of carbs, while also providing you with some protein! Don’t mind me, I’ll just be enjoying these from now until Winter 😉
Ingredients:
- 1/2 cup protein pancake mix (any brand will work!)
- 1/2 cup water
- 1 egg
- 1 tsp ground cinnamon
- 1/2 cup diced apple (sautéed in cinnamon)
- 2 TBSP coconut sugar
- 1/4 cup vanilla protein powder (I used orgain)
Directions:
1. Chop up your apple into small cubes. In a small pot, add apples, around 1/4 cup of water and 1 TBSP of ground cinnamon. Let apples simmer on low heat, monitor liquid and add small amounts of additional water if needed.
2. Wait until apples are very soft in texture and have a saucy coating on them before removing from heat. Once done, remove from heat and set to the side.
3. In a bowl combine your remaining ingredients and mix well.
4. Fold your sautéed apples into your batter and gently mix together.
5. Grease a waffle iron and pour two tablespoons of batter onto waffle iron. Cook until desired done-ness.
6. Once cooked, they can be stored in the refrigerator for 5-7 days or will keep good frozen for up to 6 months! ENJOY!
TIP: these can also be made into pancakes if you do not have a waffle iron! The same method will follow but using a frying pan and cooking over stove-top.
