Chickpea Oreo Mug Cookies

This is a small batch recipe, so I opted to split the batter into 4 and make 4 little personal mug cookies. They are the perfect, healthy dessert option & so quick and easy to whip up!
I never skip dessert BUT I do try to reach for healthier options and find ways to still enjoy dessert while also staying on track!
Ingredients:
- 1 cup roasted chickpeas (I baked mine on 400 for 10 minutes)
- 1/4 tsp baking powder
- 2 TBSP peanut butter (crunchy or creamy will work!)
- 1 tsp vanilla extract
- 1/4 cup crushed oreos
- 1 TBSP pure honey
- Splash of preferred milk (add milk until your batter has a thick consistency but is easy enough to scoop out and work with)
Directions:
1. Set oven to 350 degrees.
2. In a food processor, add all your ingredients except milk.
3. Blend on a high speed until all ingredients are well combined.
4. Slowly add in milk until you reach desired consistency.
5. Grease 4 ramekins (mugs will also work) and spoon batter into ramekins until almost to the top.
6. Bake for 15 minutes & ENJOY!
